We bake the bread. The bank used to print money.

The room

A vaulted skylight, wood panelling, jazz playing. A bank for ninety years, a bakery now.

The building is the same as it was. The vault door is still in the back. The teller windows are gone, but the wood around them is original. We kept the room and added an oven.

People walk past, look up at the skylight, and come in. Most of them stay longer than they planned.

Made this morning. Sold this morning. Gone this morning.

The cinnamon bun

Coiled tight. Glazed thin. Eaten with both hands. The one most people order on a first visit and again on a second.

The mozzarella pesto bun

Savoury and pulled-apart. Mozzarella from the centre, pesto folded through the dough. Built for a Saturday lunch.

Long ferment, dark crust, deep crumb. Goes home in a paper bag. Some people buy two.
